Soggy Bottoms: Biscuits with the Boss

Soggy Bottoms - a Bookish Journey through Technical Bakes with a floury spoon, a rolling pin, and eggshells on a slate backgroundLike many people and most notably Heather T., who wrote a guest post recently about why you should definitely be watching Ted Lasso, I am so ready for season two to begin this week (July 23rd).

To prepare, I’ve decided to make shortbread, which is a recurring food in the show. Ted concocts this routine called “biscuits with the boss.” It’s a way for him to debrief and go over things with Richmond’s owner Rebecca. She’s not to thrilled about this idea, but Ted does it anyway. He arrives each morning with this pink box full of shortbread.

Show Spoiler

Rebecca loves these biscuits so much she has her assistant, the sweet Leslie Higgins, try and track down from which bakery these biscuits came. It’s revealed later that these don’t come from any local bakery; Ted bakes them himself.

I initially started watching this because of a recommendation from a friend, and I’ve since tried to pay it forward to anyone who will listen. My boyfriend, who is soon moving away (it’s complicated and sad) and I marathoned it over a weekend. I’m echoing Heather and all of the comments left on her post that this show has been such a balm to my soul. Many of you may know that I don’t watch TV often or routinely, but this sucked me in and I firmly believe it’s one of the best shows I’ve ever seen.

The ending of the first season leaves a lot of growth for the team and its characters. I know watching this will be a bittersweet experience for me, given that things are personally in a state of flux, but there’s something about Ted that I know will soothe me to my core.

To celebrate season two and also give me something that allows me to eat my feelings, I made shortbread! I used this simple recipe from Binging with Babish, who often recreates dishes from media. He includes a couple different versions, but I stuck with the easy, classic recipe. Most can make this with everything they already have – flour, sugar, salt, and butter. Definitely easy, but I didn’t hear my oven go off and it’s slightly overbaked and also…I got bored with crumbling and mixing the dough by hands. It’s not completely homogenous.

I could suggest a book to go along with this, but I think just watching the show is a great pairing enough! (If you do really need a rec, Lucy Parker’s Battle Royal ( A | BN | K ) is a wonderful option.)

I will, however, forgo the usual cup of tea because like Ted, I, too, believe that it’s just hot brown water.

I’m always tickled when I hear of someone else who thinks tea is hot brown water.

  2. Jazzlet says:

Rather to my shock I’ve taken to drinking hot water, just boiled water with nothing added. Sometimes it’s just what I want, but I usually have a cup with my coffee and alternate between them.

  3. SusanE says:

@Jazzlet- I’ve never had just hot water, but my standard cold treatment used to be hot tea with honey, lemon juice, and a bit of bourbon. Eventually I realized it would taste better without the tea bag so now I just use hot water with all the extras.
