    One of the things I enjoy eating, but not making as much, is carrot cake. I just can’t get the carrots right. I’ve tried shredding them with a grater, I’ve tried chopping them in the food processor, but to get the consistency just right, I find I have to chop them by hand. Finely chopped. It’s sooo much work — there’s got to be an easier way! But I have to say all is forgotten when I taste the results.

    I love to make molasses cookies. Kids like them soft and chewy, husband likes them crunchy and harder. So I have to make multiple batches to give folks the texture they like best.

    I love baking (and cooking, and canning). I bake bread most often, a couple times a week. Looking very forward to making marzipan and sculpting a malevolent squirrel for the bûche, a delightful family holiday tradition.
    My go to savory meal is moroccunisian chicken (Moroccan spices, Tunisian technique, inspired by the good old days when my brother had an enormous lemon tree in his yard).
    My most successful canning this year was either the first batch of rhubarb jam or the bourbon cherries.

    I am famous for being responsible for baking the 10-lb. cheesecake in my family. We’re talking 5 bricks of cream–this is not for the faint of heart…or those prone to heart attacks.

    I love to bake. At Christmas time, I make marshmallows instead of cookies. They are so much better than store bought.
    I know I am in the minority, but I love Collin’s fruitcake. I want to see if I can recreate the recipe at home.

    Black bean brownies (puree a can of black beans and mix it into brownie mix, stick it in the oven, the end)–super easy and with all that protein I sometimes pretend it’s a legit dinner.

    Penzy’s Baking Spice — so mysterious! IT SOUNDS MAGIC.

    I like banana bread because it’s so freaking easy (one bowl) and uses up all the unattractive bananas. (I freeze them once the kids turn up their noses, then microwave ’em when i have 3-4 and dump in bowl with everything else.) Was just introduced to vanilla paste (instead of extract or bean — it’s the ease of the former with the seedy depth of flavor of the latter!) and it has changed my baking life.

    If I were a GOOD MOTHER (instead of a good-enough mother) I’d make gingerbread with the kids right now. i have a recipe where it suddenly BALLOONS on the stove and the kids go nuts. But ugh, work.

    Could this giveaway be any better?

    I love cooking and I bake for a living….it’s hard to choose a favorite….but they include bolognese and one-pot brownies.

    To Violet Bick re: carrot cake and grating the carrots –
    I have a wonderful recipe for carrot cake that uses jars of baby food carrots – very moist and so very easy. You might try that to help with the preparation.

    Most of my favorites are comfort foods: beef stew, salisbury steak, swiss steak, and beef and mushrooms for a start. My baking includes cakes and cookies. Delicious pie fillings but only ever with Pillsbury crust as I can’t make pie crust to save my life.

    Put me on the anything as long as it’s delicious list. I cannot make a edible pie crust from scratch though so the Pilsbury Doughboy is my best friend when I’m baking any pie.

    My grandmother’s Nussecken (triangular nut bars(?)) are the tastiest treat on earth and this year she finally shared her recipe with me. So this Christmas my family is going to drown in nutty yummy goodness.

    Every Christmas I make brown sugar rollout cookies, which my kids and I decorate with different coloured frostings and assorted sprinkles, silver balls etc.

    My favorite food to cook is anything Italian cause I loves me some cheese and garlic and pasta!! Although, really, I just like trying new recipes and I’ve been getting into the Christmas baking thing lately and I want to try some cookies and other sweets. 🙂 This looks like a fun prize!!     I make peanut butter cookies for my family for Christmas. I learned how to make them in Mrs. Jackson’s fifth grade class in Kalamazoo, Michigan. My family loves them!
