Hanukkah Day Seven: Book Buying is Fun!

The madness continues! Today's Hanukkah gift is another $100 gift certificate to the bookstore of your choice! That ought to buy enough books to last you about a week, right? Maybe 10 days?

My favorite cookie: Chewy Chocolate Gingerbread Cookies, one of the “Best of” from Martha Stewart Living Magazine. A bit more labor intensive than other cookie recipes, but I make them every year as a gift for Hubby, at his request. They are amazing with milk or tea, and a book to read. I cannot wait to find out your favorite snack while reading! Share share!

    My favorite thing to eat while reading is not something I can make (God I wish) and I think you can really only get it here in Maine and in New York City….(so very very sad for those who haven’t had it) It is called Little Lad’s Herbal Popcorn and you can order it here http://lads.t1005.com/popcorn….. I doubt shipping is that much, so I highly suggest you spring for some. It is soooooooooooo good!

    I love Vegan Apple Pretzel Peanut Drops from Vegan Cookies in Your Cookie Jar.  A little sweet, a little salty, with a nice mix of crunchiness and chewiness… heaven.

  6. Snack of choice when reading is chex mix.  I’m too lazy to make it, since I can buy so many different flavors in the bag.  I like to get all the sweet ones & mix them together in a bowl.  More variety that way.

    I’m fourthing or fifthing the popcorn.  While microwave popcorn is fine (Orville Reddenbacher’s [did I spell that right?  Probably not!] Movie Theater Butter in the mini bag, when I’m feeling indulgent I make it on the stove with real butter.  Funny story – I was making popcorn on the stove at my dorm and someone was shocked that you could make popcorn without a microwave!

    Definitely ice cream of any kind (out of the container of course)! Preferably ice cream of the chocolate variety if I think it will be a sad book. Even in winter you just snuggle up in a snuggy, build a fire, and settle in with a pint a book.

    Cookie Dough Drops!

    Hands-On Time: 20 minutes
    Ready In: 1 hour
    Yield: 2 dozen cookies

    Ingredients
    1 cup salted butter, softened
    1½ cups packed light brown sugar
    1 teaspoon vanilla extract
    2 cups flour
    6 ounces miniature chocolate chips
    Directions
    Cream butter and sugar together.
    Add remaining ingredients and mix well—use your hands to get it together the best.
    Roll into 1-inch balls.
    Refrigerate until firm, about 30 minutes. Dip in chocolate, drizzle with chocolate or eat as is—equally delicious no matter what!
    Let stand at room temperature for about 10 minutes before serving.
    Store in the refrigerator.

    I love to have homemade Caramel Corn to snack on while I’m reading. Here’s my recipe:
    CARAMEL POPCORN
    1 c packed brown sugar
    1/2 c butter
    1/4 c corn syrup
    1/2 tsp baking soda
    1 Tbs vanilla
    8 c popped popcorn (approx. 1/3 c un-popped)
    Preheat oven to 225F; spray a large foil roasting pan or a jelly roll pan with non-stick spray.
    Pop the popcorn. (Best from a hot-air popper; If using microwave or stove-top popcorn, be sure to remove all the “grannies”.J) Place in a very large bowl.
    In a large, heavy saucepan (use a large one – this mixture will bubble up!) over high heat, combine the sugar, butter & corn syrup and bring to a boil; let boil for at least two minutes, stirring continuously. Remove from heat.
    Add baking soda & vanilla to caramel and combine well.
    Pour over popped corn and mix completely. Spread mixture out into sprayed pan.
    Bake for ~40 minutes, stirring well every 10 minutes.
    Remove from oven; stir again and let cool.
    Enjoy!
     
    (I also like to cook some dry roasted, salted peanuts in the caramel, and stir that into the popcorn, for homemade cracker jacks.)

    Gingerbread

    1 cup granulated sugar
    1 cup salad oil (canola, not olive)
    1 cup dark molasses
    1 cup boiling water
    2 teaspoon baking soda
    1 teaspoons ground ginger
      1/2 teaspoon ground cinnamon
      1/2 teaspoon ground cloves
    2 1/2 cups all-purpose flour
    2 eggs, well beaten
    Combine ingredients in order given, dissolving soda in the hot water and adding eggs last. Pour mixture into a greased square pan and bake at 350 degrees Fahrenheit for about 40 minutes (until a toothpick inserted in the center comes out clean). “Makes a light, moist gingerbread that’s a favorite.”

    Note: This recipe comes from a cookbook called “Meals from the Manse”, a collection of recipes from preacher’s wives. This was from Mrs. C. Wesley Brough of Ashland, OR.

    (Pair this up with a nice big pot of tea, a large stash of books, and I’m set until further notice.)

    Just came back from spending the holidays with my brother’s family. My sister-in-law is a baking sweetheart.
