Hanukkah Day Seven: Book Buying is Fun!

The madness continues! Today's Hanukkah gift is another $100 gift certificate to the bookstore of your choice! That ought to buy enough books to last you about a week, right? Maybe 10 days?

My favorite cookie: Chewy Chocolate Gingerbread Cookies, one of the “Best of” from Martha Stewart Living Magazine. A bit more labor intensive than other cookie recipes, but I make them every year as a gift for Hubby, at his request. They are amazing with milk or tea, and a book to read. I cannot wait to find out your favorite snack while reading! Share share!

    My favorite recipe is for mochi cupcakes (minus the red bean filling). They’re so delicious and I just discovered them recently! Here’s my friend’s grandmother’s recipe:

    Mix together in medium-large bowl:
    1 box mochiko
    1 ¼ cups sugar
    1 tsp baking powder

    Put into 4-cup measuring cup:
    3 eggs, well beaten
    1 ½ cups milk
    ¾ cup vegetable oil (scant)

    Pour wet ingredients into dry ingredients, pour back into 4-cup measuring cup. 
    Pour batter into cupcake liners approx. ¾ full.
    Put 1 tsp an (smooth or lumpy)  into center.
    Spoon extra batter on top to cover.
    Sprinkle white sesame seeds or black poppyseeds on top.

    Bake at 375 degrees for 30 – 40 min. or until done (but don’t overbake—gets dry!).
    Delicious!  You can quickly reheat in microwave or eat cold!

    My favorite is popcorn!

    Recipe:
    Find a local Boy Scout.
    Buy some popcorn.
    Open the box and select one.
    Discard the plastic.
    Put in microwave and push the popcorn button.
    Remove when the microwave beeps and enjoy.

    I love snacks—yeah, not a good thing.  Chocolate covered pretzels are to die for—

    I use the mini knot pretzels and dip them in white or milk chocolate—the dipping kind that in the bars—I use a fork to dip them and take them out then put them on parchment paper.  After they harden I just put them in a bowl or basket and there you go!  Sometimes we fancy them up with sprinkles that are sprinkled on before the chocolate hardens!

    My mother makes the beat squares.
    SODA CRACKER BARS  
    1 c. sugar
    1 c. butter
    Boil one minute. Put a layer of soda crackers in greased 9 x 13 inch pan. Pour sugar mixture over crackers. Bake 5 minutes. Remove and cover with 12 ounces semi-sweet chocolate chips over bars. Let melt and spread. Super easy, and super tasty!

    After a couple okay and several failed attempts at using other peoples’ recipes for making scones, I created my own.

    2 cups all-purpose flour
    1/3 cup sugar
    1 tsp baking powder
    1/4 tsp baking soda
    1/2 tsp salt
    8 tablespoons non-salted butter
    1/2 cup sour cream
    1 egg
    1 tsp vanilla
    1/2 cup dried cherries (i used tart cherries)
    1/4 (roughly) cup semi-sweet chocolate bits

    Preheat oven to 400 degrees. Combine all dry ingredients. Rub in butter until breadcrumbesque consistency. In separate bowl combine sour cream, vanilla, and egg. Mix wet into dry until just combined. Do not over mix. Shape into ball. Cut into 8 pieces and bake for 12-15 minutes.

    I echo all of the chex mix lovers.  In addition to following the traditional recipe described and linked above, I like to add pretzels and sometimes some cheerios.  If i’m in a serious snack mood, I heat some in the microwave and the rest in the oven (where it tastes better, but takes a lot longer)

    I like something I can dip into now and again, and that I usually have the ingredients for in the cupboard.

    Here’s something quick and savoury for cheese lovers. It gives you a nice bowl of crunchy, cheesy nibbles:

    Flatbread (Lebanese bread, mountain bread, any thin unleavened bread will do)
    Grated parmesan (Pre-grated will do; you don’t have to spring for the expensive stuff)
    Spice mix – I use different ready mixes; a couple of home-made alternatives: thyme/garlic powder/cumin, dried olives/dried tomatoes/basil

    Lay flatbread on plate
    sprinkle a generous layer of cheese over the whole surface (right to the edges!)
    Sprinkle spice mix, salt to taste (I like mine salty)

    Microwave on high for 100 secs

    Cut into pieces

    Microwave on high for 30 secs or until crispy.

    Clearly you can also do this in the oven, but a microwave is quicker.

    My local market sells Kettle corn popcorn that’s amazing.  It’s like crack and perfect for reading. I can easily eat the while bag.

    Or cheat and use a hot roll mix and the poppyseed filling in a can. My mom usually makes this, but she had shoulder surgery a month ago and can’t attack yeast breads like she usually does… and yeast hates me. It dies if I look at it… all my yeast breads are flat. 🙁

    It’s not a exactly a recipe, but some assembly is required. I like to eat Ritz crackers with peanut butter and honey. You mix the two in the middle and make a little sandwich. Also great with Nutella 🙂

    And if I need a snackable snack, well, you just can’t beat Rice Krispies Treats!
    5 cups of Rice Krispies
    4 cups of marshmallows…plus a few more
    3 tablespoons of butter

    Melt the butter over medium heat; add the marshmallows; stir, stir and stir some more; add the cereal; dump it all into a buttered casserole dish and press it flat with a buttered spoon. Then immediately pull still-warm chunks out to eat. Yum!

    This is a little labor intensive, but very easy, and the result is sooooooooo yummy! (Plus allrecipes.com is awesome because you can plug in how many servings you want and it does the math for you!):

    A favorite meal that goes along with the above recipe is a Taco Ring, Here is my attempt at a recipe from memory.
    prepare 2lb taco meat (ground turkey, beef, pork, tofu) with your favorite taco seasoning.
    get one regular sized bag of shredded cheese (your preference)
    2 cans of crescent rolls
    and all your favorite Taco toppers

    preheat the oven to the reccomended crescent roll temp
    grab a 9×13 pan, liberally spray the edges with non-stick spray and set the crescent rolls around the outer edge of the pan so that the wide end is setting in the bottom of the pan and the point end is hanging over the outer edge of the pan, all the way around.

    Mix about 2/3 of the cheese with the meat and then spread all the meat around on toe crescent bottom flipping the pointed end over the meat when it is more or less evenly distributed. Bake for the recommended crescent roll time.

    Slice and serve with build your own toppers!

    I like these because they’re so easy and delicious too:
    CHOCOLATE OATMEAL NO BAKE COOKIES

    2 cups sugar
    2 sticks margarine
    1/2 cup milk
    2 to 3 teaspoons cocoa powder
    1 teaspoon pure vanilla extract
    1/2 to 2/3 cup smooth peanut butter
    2 cups (uncooked) oatmeal

    Boil sugar, margarine and milk for 2-1/2 to 3 minutes.  Remove from heat and add cocoa, vanilla, peanut butter and oatmeal.  Beat until glossy and thick.

    Using a teaspoon, drop mounds of the mixture onto waxed paper.  Let cool.

    I don’t eat anything while reading (don’t want to get food on the book or fingerprints on the ereader), but I do drink coffee or tea.  I like using coconut milk as well as heavy cream in my coffee.  Flavored syrups are great, too.

    I try not to eat when reading (or it’ll be too much eating!) but if I have to, I usually go with chocolate (dark chocolate mostly) and a pack of chips – especially at the pool side or at the beach. YUM!
