Happy Hannukah! Here’s my family’s own latke tip: regardless of which recipe you use, fry them in a mixture of half oil and half schmaltz (rendered chicken fat). It makes them taste AMAZING. Don’t worry about the coronary effects; it’s only once a year!
My daughter ate latkes with applesauce at kindergarten yesterday and now demands to know why we don’t celebrate Hanukah. Copying down your latke recipe to get back in her good graces.
